Its production follows the requirements of the Municipal specification: olives must be harvested within the territory of Angera and belong to the varieties Leccino, Frantoio, Pendolino, Grignano, Moraiolo, Taggiasca, or other traditional local cultivars. The oil is cold-pressed using mechanical methods, preferably on the same day as the harvest or within 48 hours.
